Spicy Tomato Jam

1 hour · serves 1

Cook low and slow and add sugar to taste.

Ingredients
1 lb campari tomato
1 lemon, zested
1 tbsp crushed red pepper flakes
⅔ cup sugar
Notes

Seems crazy to add sugar to taste, but depending on the tomatoes, they may or may not need too much sugar.

Method
1

Slice all tomatoes into quarters.

2

Add to a pot and let them reduce for as long as you'd like, around 45 minutes - 1 hour. You'll start to see the tomato start to release all their juice as well as a lot of water. If the pot is small and tall, the water may not be able to evaportate quickly. You can either use a bigger, wider pan or remove some of the excess water and let the tomatoes keep reducing. If you want to reserve the water, you can add it back in.

3

Once tomatoes are the desired consistency and feel like one cohsive mix, add lemon zest, sugar, and red pepper.

4

Mix everything and taste. Adjust accoridingly by adding more acidity (lemon) or more sweetness (sugar) or spice (red pepper).

5

Take off the heat. It will thicken as it sits, but you can always add cornstarch to help it along if you want. Store in the fridge.
